Stuffed Mushrooms                          Appetizer

 

12 large mushrooms               1 /2 tsp black pepper

2 Tblsp. olive oil                1 slice Italian bread, soaked in water, squeeze dry

1 small onion, chopped           1 egg

1 / 2 clove garlic, minced        2 Tblsp. Italian bread crumbs

4 anchovy filets, minced         1 Tbls olive oil

1 Tblsp. Fresh Parsley, mince

1/4 tsp sea salt

 

Wipe the mushrooms with a clean dish towel or a paper towel to clean.

Chop the stems and sauté on low heat in olive oil with onion & garlic 5 minutes.

Add anchovies, parsley, S&P and cook additional 5 minutes over brisk heat (don’t leave the stove)

Remove from stove. 

Add bread & egg and mix thoroughly with your clean hands. 

 

Fill each mushroom cap with stuffing, rounding the stuffing up on top.  Sprinkle with bread crumbs, and then sprinkle olive oil over the stuffing.

Place in greased baking dish in hot oven 400 degrees for 20 minutes.

 

You may want to add more olive oil as it cooks so it will be moist.

 

Also, you may substitute anchovy filets with a shot blob of anchovy paste.
